Inspired by the vibrant flavors of Mexican street food, these Grilled Skirt Steak Tacos are a delightful twist on a classic favorite. Juicy, marinated steak pairs beautifully with a fresh and zesty avocado salsa, all wrapped in warm corn tortillas. It's cozy comfort food that feels both familiar and exciting.
Step 1: Preheat the grill to medium-high heat. Season the skirt steak with ground cumin, minced garlic, salt, and pepper.
Step 2: Grill the skirt steak for about 4-5 minutes per side, or until desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
Step 3: While the steak is resting, prepare the avocado salsa. Dice the avocados and red onion, and chop the cilantro. Mince the jalapeño, discarding seeds for less heat. Combine all in a bowl with the juice of a lime and a pinch of salt.
Step 4: Warm the corn tortillas on the grill for about 30 seconds per side.
Step 5: Assemble the tacos by placing slices of steak on each tortilla, topping with a generous spoonful of avocado salsa. Serve immediately.
